      Raw? Cremated? Do you not know what a “rub” is? Try Googling “Brisket Rub”or “Brisket Brown Sugar Rub”…and have you also figured out why the pink is on the edge and not the middle? And what’s wrong with “Medium Rare”?…and blah blah blah!

      It isn’t raw, or even “medium rare”. Things like the brisket shown there are cooked to about 190F, which by normal standards would be extra extra well done. But it is slow cooked which renders the fat and connective tissue in the (naturally stringy) brisket, making it very very juicy and flavorful.

      The pink that you see is called the “smoke ring”. It is the color of smoke flavor permeating the meat.

      Don’t question American’s ability to cook meat, bro.

      PS: The picture of the bone-in ribeyes on the weber grill isn’t BBQ. It is grilling.
